It depends on coding type, decoding program and memory size of the controller. Mostly, a controller can store 20 remotes. We also can have the controller work with only several remotes or hundreds or even innumerable remotes.
Security level depends on your demand and coding type. We have universal remote control which can work with most of learning code receivers. And we also have high security rolling code (Keeloq) which can not be copied.

ASK/OOK and FSK are both modulation types. ASK/OOK is more common because it is simple and cheap. But if you want to have longer distance, or more stable communication between receiver and transmitter, FSK is a better choice. Moreover, FSK is easy to be configured by extra MCU, so it is easier to pass Korean KC or Japanese TELEC certification.

We used to make ISM band remote control products. It is license-free in all countries. You just need to tell me which countries the products will be use, then we will select right frequency. Most of our products work at Sub-1GHz, for example 315MHz, 433.92MHz, 447.6MHZ, 868MHz, 915MHz and so on. We also can make them work at 2.4GHz.
Same product but different price is normal. The price depends on various factors, such as material, QC system, certification, solution, and so on. We always use good materials which are better than average, to keep our products competitive. And for some industrial controllers, we used to adopt materials from first class brand, as we know that the stability and reliability are the most important.
SAW means Surface Acoustic Wave. SAW devices are used as filters on RF remote controls. It belongs to last generation technology. SAW based remote control is cheap, but can not suppress harmonic wave. Now SAW based remote control is gradually replaced by RF chip, as its cost is getting lower. RF chip is high integrated. It requires only few components, so it is low failure rate, high accuracy, narrow bandwidth, and ultra-low hormonic wave. It is much easier to pass CE and FCC certification. And if you want to pass Korean KC certification, RF chip is the only choice. We have remote controls based on both of two technologies. We can make whichever you prefer.
By the way, RF chip based remote control can work at DC3V (CR2032 coin battery). That means, it consumes less power, and the end user is more convenient to buy batteries for replacement.
